About Audit of food safety systems Target group: The course is aimed at you who participate in developing a HACCP system or carry out internal audits or supplier audits. An effective HACCP system is a prerequisite for preventing errors in relation to food safety. It is a requirement in legislation, as well as part of all certification standards within food and feed. These standards can e.g. be FSSC22000, ISO22000, BRC, IFS, GMP+ or others. It is an advantage if you already have a basic knowledge of the structure of the HACCP system. Target group: After the course, you can plan and carry out audits of a HACCP system and report on it. Contents: In the course, we will cover these topics, among other things: - All about HACCP according to Codex Alimentarus - Audits of the HACCP system - Assessment of the structure of the system - Evaluation of risk and risk-reducing measures - Assessment of prerequisites and critical control points (CCPs) - Validation and verification activities - Reporting and follow-up The course alternates between teaching and group exercises.
